Mouthwatering Monday

Hi guys, happy Monday! I hope your weekend was spectacular. Chris and I spent our weekend visiting with friends and family, and working on the house. On Saturday Chris' Grandfather and Grandmother came over to help us put up the shelves above the stove, and to start our herb garden. Chris' grandmother loves to garden, so we took her up on her offer of helping us get our herb garden, and flower garden's started. On Sunday we had more of  a low-key day visiting with friends and family. We went to a local pond and relaxed with Chris' best friend and girlfriend, and then made our way to Chris' brothers birthday party in the afternoon. As promised today I am posting my Banana Nut Muffin Recipe that I talked about in my Things I'm Loving Friday post.

Banana Nut Muffins
Ingredients
  • 1 1/2 cups all purpose flour
  • 1/2 cup wheat flour
  • 2/3 cup packed brown sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 cup mashed ripe banana (about 2 bananas)
  • 3/4 cup milk
  • 3 tablespoons coconut milk
  • 1/2 teaspoon vanilla extract
  • 1 large egg
  • 1/4 cup chopped walnuts (I used 1 cup, cause I love walnuts!)
Streusel Ingredients
  • 6 tablespoons regular oats
  • 5 tablespoons all purpose flour
  • 2 tablespoons brown sugar
  • 2 tablespoons butter, softened
  • 1/4 teaspoon ground cinnamon
Directions
  1. Preheat oven to 375 degrees.
  2. Combine flour, brown sugar, baking powder, ground cinnamon, and salt in a large bowl.
  3. Combine banana, milk, coconut oil, vanilla extract, and egg in separate bowl, mix well.
  4. Combine banana mixture to flour mixture stir until moist.
  5. Add walnuts in.
  6. Place muffin cup liners in muffin cups.
  7. Spoon batter into 12 muffin cups.
  8. Prepare streusel by mixing oats, flour, brown sugar, butter, and cinnamon in small bowl.
  9. Top muffin batter with streusel, and bake in oven for 22 minutes.
  10. Enjoy!
